性狀：
無色或黃色液體，露置空氣中逐漸變成棕色，能溶于醇，苯和氯仿，不溶水。工業(yè)品為黃色到紅色油狀液體，有豬油氣味。熔點(diǎn)：α-型13.4℃；β-型 16.3℃，由于含有雙鍵，在空氣中長期放置能發(fā)生自氧化，出現(xiàn)腐敗的哈喇味。油酸與硝酸作用則異構(gòu)化為其反式異構(gòu)體，的反油酸。
